I am guilty of having given my kids boxed granola bars for breakfast. It was easy. But the list of ingredients on the back of the box and all the sugar and preservatives have convinced me that I need to do better…for my kids and for myself.

One of my students brought me this recipe for a class project. I thought they were amazing! I modified it a little bit, and Homemade Peanut Butter Chocolate Chip Granola Bars were born. My kids LOVE that these stay chewy and don’t dry out. I feel good about feeding them something that not only tastes great but contains a list of ingredients that I can recognize. 🙂

This is seriously one of my favorite recipes and it takes VERY LITTLE TIME to make. As a working mom, time is precious. Having a go-to recipe for breakfast and snacks that I can make on the weekend is a huge win.

I can make these bars before we head to church, let them cool while we’re gone, and then slide the whole pan onto my largest cutting board to cut up when we get home. I like to make 16 bars for my big kids, but if your family is younger, 20 bars is perfect. To keep the bars nice and chewy, I wrap them tightly in plastic wrap and stick in our snack drawer for easy access.
