Breakfast Oatmeal Pot: Overnight Oats Like You’ve Never Had Them!

I’ve tried a lot of overnight oats recipes but never LOVED any of them. At least, not until Breakfast Oatmeal Pot became a morning staple!

My husband and I attended my cousin’s FABULOUS wedding in Chicago several weekends ago, and we can’t stop thinking about all the great food we consumed. One of those dishes was the free breakfast from our hotel, The Hoxton. Every morning hanging on our door, we would find a fun little bag of an apple, fresh orange juice, and these overnight oats that were like nothing I’d ever tasted. I knew I had to try to recreate the recipe!

Using the list of ingredients on the lid of the container, I worked to find what I needed in my local small-town stores. Thankfully, Aldi and Walmart pulled through for me! 🙂

The list of ingredients for Breakfast Oatmeal Pot isn’t a short one. However, it does go together quickly. The recipe can also be scaled up or down, depending on the number of servings you wish to create. (The included recipe is for two servings but my pictures were taken when I quadrupled the recipe for our family.) 🙂

If you choose, you can leave out the poppyseeds or the flax seeds. The chia seeds, from what I’ve read from other overnight oats recipes, are necessary to help the breakfast pot thicken overnight. I have no idea what will happen if you leave those out. So…do so at your own risk. 🙂

I always use old-fashioned oats in recipes since they are whole grain and keep me full longer. If you have quick oats, those should work just fine, too. Just don’t use steel-cut oats…they will not soften.

Though the recipe isn’t vegan due to the honey, you could make it so by substituting a different sweetener. I have local clover honey that I use. I adore its light flavor. But if you have a different local honey, say buckwheat or orange blossom, you could use that. These kinds of honey just have a much stronger flavor.

I really enjoy this breakfast recipe! For those unable to use milk products, this is a great morning option. I love the healthy seeds and whole grains. The coconut cream, honey, and dried berries also add a wonderful sweetness without being too overpowering. My mom declared that this is better than the original dish, but I don’t know that I’ll claim that. It is at least just as good! 🙂

Below, you can see I quadrupled the recipe. Yes, my family loves it THAT MUCH and I hope you do, too. 🙂
