English Toffee Cappuccino Mix Recipe…

I couldn’t remember how long I’ve been making this recipe until I looked at the date at the bottom of my print-out…almost ten years! Crazy! I remember when my youngest was almost two he reached up on the counter and dumped out a batch that I’d just made all over my clean kitchen floor…he is going to be 12 this year! Hard to believe I’ve been making this mix for that long! If you are curious about the original recipe, I tracked it down and you can find it here.

Over the years, I’ve modified the recipe not only to meet my tastes but also to cut down on some of the processed products and on the amount of sugar in the mix. I LOVE coffee and I really wanted to taste that in this mix…not all the sugar!

There are many school days where a hot mug of this gets me through the afternoon. It contains less sugar than a lot of other things I could eat and it keeps me satisfied until dinnertime. It isn’t the healthiest of snacks, but I find it calming. I often need this at 2:15 p.m. when I still have fifteen minutes left of school and a room full of high schoolers!
