Do you love your Instant Pot? I consider mine my kitchen best friend! It gets used countless times over the course of each week. Instant Pot Moroccan Spiced Chicken is one recipe that works very well in the Instant Pot. I throw together a few spices for the rub, pat it on each piece of chicken, and in less than 45 minutes, dinner is ready!

Instant Pot Moroccan Spiced Chicken Recipe...

The original recipe for Moroccan Chicken comes from my slow cooker cookbook, The Ultimate Slow Cooker Book by Better Homes and Gardens. It’s a great book, and I’ve used it a lot! Lately, though, I’m working to modify some slow cooker recipes for my Instant Pot. Moroccan Spiced Chicken is one of those recipes.

Instant Pot Moroccan Spiced Chicken

Instant Pot Moroccan Spiced Chicken is almost entirely hands-off. In less than five minutes, I mixed together the Moroccan spices, rubbed them on my (mostly) frozen chicken thighs, and placed the chicken in my Instant Pot. Due to scheduling, I simply covered the pot and placed it in the refrigerator. Our daughter was in charge of placing the Instant Pot insert into the machine and turning it on after she got home from track practice. It was so easy and fast! And, most importantly, healthy and tasty!

Instant Pot Moroccan Spiced Chicken

I served our Instant Pot Moroccan Spiced Chicken with a side of microwaved steamed cauliflower “rice,” but you can choose whatever you like! It reheated well in my lunch and would work well with rice, green beans, mashed potatoes, or even broccoli! Are you following a low carb lifestyle? This is the perfect dish! If you prefer a side of healthy carbohydrates, you can do that, too! 🙂
