We all have those days where there just isn’t enough time. We get up and it feels like the marathon-of-the-day begins! As a working mom, I feel like this a lot. 🙂 The pressure of having a healthy, complete, meal for my family daily can sometimes be an overwhelming task, especially when I’m asked at 6:30 a.m., “What’s for dinner?” From sheer panic, Five Minute Beef Roast was born.

Literally, I created Five Minute Beef Roast in the five minutes I had to pull out the slow cooker and rummage through the spice cabinet. Due to that limited time frame, this is why there is no picture showing the roast and spices in the crock pot before they cooked all day. Let me assure you, it looked like a piece of meat covered with spices. 😉

The spices I chose for Five Minute Beef Roast are ones that I use in many dishes. The heat of chili powder, the bite of garlic, and the smoky hit of paprika are flavors that blend well and are perfect for fall evenings at the family dinner table. I decided to add a little ground coriander to the mix because I liked its brightness when I sniffed the jar at 6:30 a.m. The blend is similar to those I use when smoking meat, and the roast really looked like it had that “bark” after cooking all day.

The Recipe…

I placed the roast in my crock pot, poured in 2 cups of beef broth and covered the meat with the spice blend. I set the slow cooker on low and left for the day. When I arrived home, I shredded the meat, cooked a fast Coriander Rice, roasted some broccoli, and called dinner a success! (If you’re eating low carb, just leave out the rice. Five Minute Beef Roast doesn’t need carbs to be AWESOME!)

Surviving as a working mom can be draining, especially with the (sometimes self-imposed) pressures to be perfect. Don’t let that overwhelm you!
