Need a thoughtful gift for that special someone? Valentine’s Day is coming, but these Homemade Chocolate Covered Peanuts make the perfect gift any time of year! With only three ingredients, the recipe couldn’t get easier, and no special cookware is needed!

Homemade Chocolate Covered Peanuts Recipe…

Like many of my best recipes, Homemade Chocolate Covered Peanuts comes from one of my co-workers. In case you didn’t know it, teachers LOVE to eat! Therefore, we tend to have a very high percentage of above-average (read: GREAT) cooks on our staff. The teacher who shared Homemade Chocolate Covered Peanuts with me might teach some of the most difficult math classes in our curriculum, but her formula for these little sweets is much easier than Calculus. No need for a fancy double boiler, expensive chocolate, or hours of waiting for the coating to set up. Nope, these chocolate covered peanuts can be ready in as little as two hours!

The Process…

As with any cooking project, there is a little prep work. Mainly, find a large glass bowl that sits inside a large pot without touching the bottom. This is your double boiler. You will fill the pot with enough water that when it boils it will not touch the bottom of the bowl sitting inside. (You will be using the steam from the water to melt the chocolate slowly and perfectly!)

Add the chocolate and almond bark to the bowl over the boiling water and stir occasionally. Once it’s melted, stir in the peanuts until everything is nicely coated.

I use my #24 scoop to portion out the chocolate and peanutty goodness! It makes fast work of the process and creates even servings. Interestingly enough, the scoops are the size of a serving of peanuts (according to the jars of peanuts I used from Aldi). For my recipe, I used wax paper as a base for the candies to harden on, however, parchment paper will work as a good surface, too.

After scooping the peanuts onto a wax paper-lined surface, just let them sit until hardened. Mine only took about two hours. I bagged mine up as gifts for our son’s basketball coaches in pretty clear bags. However, you can package these however you want! I promise you that the recipient will pay little attention to the wrapping…he/she will be too focused on how tasty these little treats are! Be careful…they are totally addictive!!!
